As more and more of us become removed from the rural life, we tend to forget where the groceries originate. The few who remain in the field of agriculture endure not only the elements of nature but a barrage of financial stresses, continually forced to produce the products that sell.
Many well meaning people may feel they are doing the buffalo population a favor by not eating buffalo meat, when in fact the opposite is true. Over the past decade several ranchers decided to expand from raising cattle to raising buffalo, but when consumer demand did not rise at the same rate as the buffalo population, the bottom fell out of the market and ranchers were forced back into raising cattle in order to pay the bills.
One of the biggest factors in returning buffalo to the plains, is for consumers to use buffalo products. Tatanka winds will provide the opportunity for consumers not only to enjoy buffalo products, but to produce these themselves.
